Licence - butchers' shop
From January 1st 2006 butchers selling unwrapped meat and ready to eat food will be subject to the new European Union hygiene regulations and they will no longer need a licence to operate.
The new regulations still mean that butcher's shops will have to have high hygiene standards and have a full HACCP (Hazard Anlysis Critical Control Point) system for food safety.
